Easy Beef Empanadas

Ingredients
1 tbs vegetable oil
1 medium onion, diced
1 lb ground beef
2 garlic cloves, minced
1 tsp each salt
1 cup shredded Bowl & Basket Colby Jack cheese
1 15-oz. pkg. refrigerated pie crusts (2 crusts)
1 tsp pepper
1 tsp cumin
1 tsp dried oregano
Directions
  1. Preheat the oven to 425F.
  2. Coat a baking sheet with nonstick cooking spray.
  3. Add vegetable oil to a large skillet and heat over medium heat.
  4. Saute onion for 5-6 minutes or until softened.
  5. Add garlic and saute an additional minute before adding ground beef.
  6. Cook until beef is browned, draining off excess fat.
  7. Let cool. Unfold 1 crust at a time and cut out 6 or 8 inch rounds.
  8. Place 2-3 tbsp ground beef mixture on one side of the dough and top with shredded cheese.
  9. Fold the other side of dough over the top and press edges down with the tines of a fork to seal.
  10. Repeat to make the rest of the empanadas.
  11. Place on a prepared baking sheet and bake for 15 minutes or until the empanadas are golden brown.
